How much sugar paste (fondant) do I need?
The Card Of Really Useful Stuff tells you how much sugar paste (fondant) you need to cover cakes of different sizes (4 inches - 14 inches), round and square. If you have a different shape such as a heart, flower, hexagon use the quantity stated for a round.
The quantity is what I would use, I have allowed a bit spare so you can cover the cake and any trimmings you can save for another project. You don't need to round the quantity up. If you have too much it is very difficult to work with.
The card also tells you how much sugar paste (fondant) you need to cover cake boards (drums) of different sizes (4 inches - 20 inches), round and square.
How much ganache do I need?
The card of Really Useful Stuff gives you the total quantity of ganache you need to fill and cover cakes of different sizes (4 inches - 14 inches), round and square.
The ganache quantity is the total weight. Recipes for ganache are on the Chocolate card
To work out how much ganache to make it is simple maths. I always round to the nearest 5g for ease.
For example: A 4 layer, 6-inch round cake requires 735g ganache.
Dark ganache (1 part choc/ 1 part cream) 735 divided by 2 =
370g cream, 370g chocolate
Milk ganache (2 parts choc/ 1 part cream) 735 divided by 3 =
245g cream, 490g chocolate
White ganache (3 parts choc/ 1 part cream) 735 divided by 4 =
185g cream, 555g chocolate
How much buttercream do I need?
The card of Really Useful Stuff gives you the total quantity of buttercream you need to fill and crumb coat cakes of different sizes (4 inches - 14 inches), round and square.
For example: A 3 layer, 6-inch round cake requires 250g buttercream to fill and crumb coat.
Basic buttercream (1 parts butter/ 2 parts icing sugar) 250 divided by 3 =
85g butter, 170g icing sugar
How much frosting do I need to pipe onto cupcakes?
The Card of Really Useful Stuff tells you how much frosting or buttercream you need to pipe onto cupcakes for large tops such as a Mr Whippy style swirl or a smaller rose swirl.
Recpies for frosting and buttercream are on The Icing Recipes card.
For example: 6 cupcakes with a Mr Whippy swirl and 6 cupcakes with a rose swirl requires 620g frosting.
On the icing recipes card 1 quantity of frosting makes 525g (I added the weight of the main ingredients together)
I would make 1.5 times the recipe and keep any spare in the fridge.
