I have never found any of the videos that Annabelle has produced to be anything other than helpful, informative and a useful tool to assist in producing amazing cakes. However, my overall favourite and go to is the one about how to Marzipan and Ice Square and Round Cakes – and this will come as no surprise to Annabelle as I always remind her how useful I have found it. Fashions and trends have moved away from fruit cakes over the years since I started baking many years ago, but I do like to make a fruit cake for special occasions and especially at Christmas. But no matter how many times I have made one there is always something I forget or need to be reminded of, especially when it comes to doing the marzipan stage. I cannot say how many times I have re-watched this video and always have it to hand when I start to marzipan and ice my cakes. It is like having Annabelle there with me in the kitchen and I have the video on pause and go throughout the process. The video guides you through each stage and points out the significant differences between how to cover a square and a round cake as the process is slightly different depending on the shape. Annabelle describes in detail what equipment and tools you need to have to hand before you start, and the ‘Card of Useful Stuff’ indicates the weight of marzipan and sugarpaste required to cover each cake. The video clearly shows how to cut the marzipan to size and shape, helping you to easily attach it to the cake and clearly demonstrates how to achieve clean, sharp edges to the finished cake. I would say that this video is well worth having and I cannot recommend it highly enough. I would suggest that you spend an hour or so watching the whole video in one go (a great way to sit and enjoy some ‘down time’) and then have it to hand to re-watch during each stage when you put what you have learned into practice.
