Create a truly spectacular Christmas centrepiece — a stunning Christmas tree made entirely from rich fruit cake, decorated to your own colour scheme and packed with skills you’ll be able to use again and again.
Over six weeks, you’ll create this impressive Christmas cake using five rich fruit cakes, transforming them into a beautiful, multi-tiered Christmas tree complete with tiny cake presents around the base. And because each section is made from cake, it has been designed so that you can separate the different cakes when you’re ready to serve, making it easy to share with family and friends.
This is much more than simply decorating a Christmas cake. Throughout the six weeks, you’ll learn a wide range of professional cake-decorating skills, giving you the confidence to tackle all sorts of future projects.
What you’ll learn
You’ll learn how to:
- Accurately level and prepare rich fruit cake
- Marzipan a fruit cake using the panelling method
- Ice a cake in fondant to achieve a smooth finish and sharp edges
- Stack cakes securely and use dowels for support
- Carve cake to create the Christmas tree shape
- Use moulds and cutters to create detailed decorations
- Accurately space designs around a cake
- Make beautiful bows from icing, both using a mould and freehand
- Create decorations using royal icing piping
- Use a mould as an alternative if you’re nervous about piping
- Use PME Fun Fonts to create your own Christmas message
- Ice a cake board
- Add ribbon around a cake board and create a coordinating bow
- Paint with lustre colours onto sugar
- Create the tiny cake presents around the base of the tree
- Safely store and transport your finished Christmas cake
Make it completely your own
The beauty of this design is that you choose the colours.
The sample cake has a traditional dark green Christmas tree teamed with red and gold, but there’s no reason yours has to look the same. You could choose classic white and silver with touches of pale pink, icy blues, rich purples — or create a completely different colour scheme to complement your own Christmas decorations and celebrations.
You’ll also be able to personalise the message using the PME Fun Fonts, making your cake truly unique.
Whether you’re an experienced cake decorator wanting to learn new techniques or you’re looking for a special Christmas project that will challenge and inspire you, this six-week course will give you the opportunity to create something you’ll be incredibly proud to display at Christmas.
And when the celebrations are over, you’ll have learned a whole collection of techniques that you can take forward into your future cake decorating.

Annabelle established Confection Perfection (now re-branded as Annabelle Jane Cake School) in 1996 from her kitchen table; bought her first retail premises in 2000 and is now settled in a delightful setting in Bearsted, just outside Maidstone. Annabelle has extensive cake decorating experience and is highly creative and artistic. Annabelle is an accredited tutor for the PME Diplomas in Sugar craft and also designs and delivers a wide range of other highly successful cake baking and decorating classes. Annabelle has a huge vision for our Cake School and ensures that the strong reputation we have earned continues to grow lead by her consistently high standards.
Everything is included - all the rich fruit cakes, the marzipan, the icings, colours, board, box, ribbon, use of equipment.
Students recieve a comprehensive set of course notes.
