Learn how to create and assemble a double height stacked cake during this one day course. The main focus of the day is on carving and constructing an even double height base tier, icing both tiers with sugar paste to acheive a smooth professional finish and then learn how to stack the cakes with dowels. This is currently our only course which includes using ganache; you will learn how to make ganache and how to use it to fill and crumb coat your cakes. Ganache is a much firmer base (when made and used correctly!) so is ideal when creating more complex designs. You will be using white chocolate ganache with a luscious lemon cake and chocolate ganache with a madeira cake.
You will learn how to create a fun fantasy style flower and edible curling ribbons as a fun and contemporary decoration.
This is really fun course, you can choose your ribbons and colour schemes enabling you to use your own creativity and expression. It is also a course which covers a wide range of skills - go home inspired! Double height cakes are very fashionable but the construction is harder than you think - we will show you step by step and share our top tips for success.

Director
Annabelle established Confection Perfection (now re-branded as Annabelle Jane Cake School) in 1996 from her kitchen table; bought her first retail premises in 2000 and is now settled in a delightful setting in Bearsted, just outside Maidstone. Annabelle has extensive cake decorating experience and is highly creative and artistic. Annabelle is an accredited tutor for the PME Diplomas in Sugar craft and also designs and delivers a wide range of other highly successful cake baking and decorating classes. Annabelle has a huge vision for our Cake School and ensures that the strong reputation we have earned continues to grow lead by her consistently high standards.
Everything provided including 2 Madeira cakes and a lemon cake, all icings, board and box. Course attendees will also receive a full set of course notes and a discount sheet on items used during the course purchased in the cake decorating supplies shop for the duration of your course.
- What's the skill level?
We suggest you have some experience of cake decorating and working with sugar paste. If you have attended Back to Basics or the one day Professional Cake Decorating would be ideal. This is a perfect course for those wanting to increase their repertoire.
