Salted caramel cupcake collection


Salted caramel cupcakes, salted caramel Swiss meringue buttercream, salted caramel sauce, salted caramel mini heart cookies, honeycomb and salted caramel mini meringue kisses - these really are a taste of heaven.

Bake the cupcakes.....

The 6 inch round quantity makes approx. 12 cupcakes. Using an ice-cream scoop helps achieve even sized cupcakes. Bake for 30-35 minutes.
Make the sauce....
Make the salted caramel sauce as per the recipe card. To make it easier to drizzle either pop it in a squeeze bottle or a piping bag.
Make the buttercream.....
Salted caramel Swiss Meringue Buttercream (SMB)
Refer to the Icing Recipes card
Make the SMB as per the recipe and then fold through 95g cooled salted caramel sauce.
Pipe swirls on top of the cupcakes (I used a 2ES nozzle, a 1M nozzle and a 2D nozzle)
Bake the salted caramel mini cookies....

In the vanilla cookie recipe, replace the unsalted butter with salted butter; replace half the sugar with golden caster sugar; replace the other half sugar with salted caramel flavoured icing sugar; leave out the vanilla.
Roll the dough thinly and cut small heart shapes with a cookie cutter. Bake as per the recipe.
Bake the baby meringue kisses....

Replace the caster sugar with golden caster sugar and use salted caramel flavoured icing sugar. Use a number 13 or 22 piping nozzle and paint 3 lines up the inside of your piping bag with Autumn leaf paste colour (Sugarflair). Pipe tiny star shapes approx 2cm in diameter. Bake for approx 30mins.
Make the honeycomb....

Gluten free? Adapt the recipes for a gluten free version. In the salted caramel cake - use gluten free flour and xanthan gum as per the Gluten free maderia cake recipe card
The sauce, buttercream and honeycomb are already gluten free. Meringues - replace meri-white with a gluten free pure albumen powder. Cookies - simply swap the flour for gluten free flour.
